Since updating and having solved the problem I origiallhad with Mail, I find that whenever I log in to my account a small message briefly appears telling me to increase the contrast on my display.

The only way I have found to do this is in Accessibility preferences but this puts the toolbar icons in Mail and Safari in little boxes. Is this the normal Big Sur look or is there another way of increasing contrast without using Accessibility preferences?

In System Pref. Accessibility did you select Display, tick Contrast and adjust slider?

Investigation today shows that the icon and other outlines disappear if you uncheck "Increase Contrast".
